Grain Free Bacon Quiche
Base ingredients
2 cups ground almonds
1 garlic clove crushed
1 tbsp dried oregano
⅓ cup olive oil
3 tbsp water
Filling ingredients
1 garlic clove, crushed
1 onion, sliced
Handful of mushrooms, sliced
5 asparagus, chopped
1 large tomato sliced
4 rashers nitrate-free bacon, cut into bite-size pieces
6 eggs, beaten
Method
Mix the base ingredients and then press into a flan dish. Bake in oven at 180˚C for 15 minutes.
Put all other ingredients, apart from the eggs, in a frying pan and fry lightly in coconut oil for ten minutes. Place the fried ingredients in the flan dish. Pour over the eggs and then pop back in the oven for 30–40 minutes.
